Here are a few general notes about the recipes in this blog. If you are not sure about anything or have any questions please feel free to contact me through the comments link under the recipe:
- All eggs are large and organic
- All butter is slightly salted
- All Herbs are fresh, unless I mention differently in the recipe
- All Sugar is unrefined, I feel it is healthier as comes from sugar cane rather than refined beet sugar
- All dark chocolate is minimum 70% cocoa solids
- All olive oil is extra-virgin. I use a more basic extra-virgin oil for cooking and then a special Extra Virgin olive oil for salads and dressings.
- I use unwaxed citrus fruits. If they are not labelled as un-waxed or you are unsure then scrub them with hot water before zesting
- All salt is Maldon Sea Salt
- Pepper is freshly ground
- Leftovers, if to be kept, should be covered and refrigerated or frozen as soon as cool and kept no longer than indicated. Never re-heat previously frozen or re-heated food
- Where I don't mention it, it is not advisable to make ahead or freeze
- Any dishes with raw or partially cooked eggs should not be served to weak or compromised immune systems, such as pregnant women, the elderly or the very young
- Always read the recipe right through before starting to cook
