Today is match day (England v Scotland in the Rugby World Cup). My husband loves rugby so I took the children out for a long walk in the sun while England scraped to victory, leaving one very happy husband and Scotland heading home.
To celebrate I made one of his favorite meals, Coronation chicken. It is a family recipe and perfect for turning left over chicken into a delicious meal ... you might think that the ingredients for this sound disgusting but I promise you they work. This version of the dish goes down especially well with my husband who loves the fact it is raisin free ... one of his rules in life (he does not have many but this is one he is passionate about) is that you should not eat fruit with savory food!
We are eating it in baguette with salad. It is brilliant served with couscous for a summer lunch or picnic, I have half a chicken left so I have made half the quantity of sauce shown below.
CORONATION CHICKEN - Serves 4
Ingredients
4 Cooked chicken breasts or the meat from a small roast chicken, 250g Mayonnaise, 1 Tablespoon of medium curry powder, 1 Tablespoon of Strawberry Jam, 20 ml Milk
- The chicken should be cold for this recipie so you need to cook it a couple of hours before you make it.
- Once the chicken is cool, cut it into bite size pieces, if using roast chicken i normally just tear meat with my hands, as it is much quicker
- Put the mayonnaise, curry powder, strawberry jam and milk into a jam jar and shake for 20 seconds. If you would like it slightly sweeter, add a little more jam. You can also do the same with the curry powder if you want more spice
- Pour the mixture over the chicken, stir, so all of the chicken is covered and you are done
Cooking notes
If you don’t like to much sauce on your chicken add it a little at a time until you are happy with the quantities.
If you only have half a chicken then reduce the quantities by half to make the sauce. A quick tip I learned from my mummy that works brilliantly when you want to make a small amount of the sauce ... use half a jar of mayonnaise (if you have one in the fridge), put all the ingredients in the mayonnaise jar and shake it.
Adapting
I often serve this as a canape. I use chicken breast rather than roast chicken as it holds together better.
I cover a bite size piece of chicken in the sauce and then put it on the end of a wooden skewer and place on a plate with all the chicken at one end.
