I am off out to have a glass of wine with a friend tonight. My husband works long hours so i tend to leave something for him to cook while i am out.
Chicken wrapped in parma ham is a favorite ... quick to prepare and easy for my husband. He can come home and bung it in the oven with some chopped up new potatoes and serve with salad.
I prepared two over lunch when my children were in bed and have just cooked one for myself for lunch ... yum.
CHICKEN WITH PARMA HAM
Ingredients
1 Chicken breasts per person, 2 Slices of parma ham per person, Olive oil
- Place a 30cm x 30cm square of cling film on the side
- Put two pieces of parma ham on the top, they should be over lapping and roughly the same length
- Put the chicken in the middle of the parma ham and use the cling film to help you wrap the breast up tightly. Once wrapped twist the ends of the cling film
- Place in frige till you need them. They will need a min of 30 minutes
- When you are ready to cook the fillets, preheat the oven to 200.
- Unwrap the clingfilm and place on baking tray, i use resuable baking paper so it does not stick. Place in middle of the oven for 15 minutes.
- The chicken should be cooked through and the parma ham crispy
Cooking notes
If you are doing these for a dinner party cook one extra so you can cut into and check it is cooked ... there will always be takers for seconds.
Adapting
I adapted this recipe from a friend who served chicken wrapped in bacon and stuffed with cheese. I prefer parma ham as it is more delicate and don’t stuff the chicken as I feel it creates to many flavours on one plate.
If you like food with a lot of flavour you could try filling the chicken with cheese (blue or bousin would be good), sundried tomato, garlic ... experiment and see what you like.
